Cyclic Voltammetry (CV) is a powerful electroanalytical technique for the study of antioxidant molecules.

In the present study, CV was used, in addition to conventional analytical determinations (e.g. spectrophotometry, HPLC), to investigate the behavior of some of the most common wine antioxidants.

Sulfur dioxide, ascorbic acid (ASC), glutathione (GSH) and an inactive dry yeast preparation were compared in different concentrations, to assess their ability in protecting (+)-catechin, in wine-like solution.

The antioxidants tested demonstrated different activities, connected not only with their intrinsic antioxidant characteristics, but also to the average concentration, they may have in wine. CV results were in agreement with conventional analytical parameters, demonstrating the potential of this technique for the study of wine oxidation.
