The cyclic voltammetry is an analytical technic, based on redox systems, that allows, if combined with multifactorial statistical analysis, an innovative approach to the wine oxidation study.
The voltammogram (obtained graph) enable us to have important information on the behavior of certain chemical families in a solution.
The presentation of Piergiorgio Comuzzo at Enoforum explains the potential of this analytical technique to characterize phenolic substances and to study oenological antioxidants on the basis of their reducing power. The voltammetric approach, applied in conjunction with data processing techniques based on multivariate analysis, made it possible to discriminate wines of different varieties, as well as to identify correlations between voltammogram characteristics and oxygen consumption or oxidation resistance of wines.
