Sparging of wine: don’t stress Dissolved oxygen levels in wine are often reduced by sparging with an inert gas such as N2. However, the factors that influence the effectiveness of sparging and the effects it can have on the chemical composition of the wine were not well known prior to this study.

Winemaking factors such as gas flow rate, gas composition, wine temperature and bubble size were investigated on the efficiency of oxygen removal in wine.

Find out whether different gas flow velocities did not significantly affect the rate of dissolved oxygen removal, and whether the size of the inert gas bubble and the temperature of the wine were the main factors influencing the effectiveness of dissolved oxygen removal from wine.

Did sparging with N2 gas have an effect on a wide range of compounds tested before and after sparging? Have significant losses of dissolved CO2 been observed?
