As a part of the Integrated Plan of Tuscan Region “the sangiovese, the “territory”, the sustainability: an innovative cultivation vision for a sparkling production”, in the undermeasure 16.2, the Oxyless project aims to deal with the oxidation risk in the wine made out sangiovese grape.
The general objectives are :
- Valorization of the grape as a raw material increasing the medium price and stabilization of the income of farmers along years
- Reduction in the agriculture sector of production of greenhouse gas through the reduction of technological operations that would produce gas and impact the hydric balance
- Promotion of the innovation as an instrument to maintain and develop the rural economy
The specific objectives of the project are:
– Development of a quick and economic test to allow to determine the specific oxidability of each wine lot, white, red o rosé in several phases off its elaboration
– The use of a test to assess and quantify the effect of various viticultural and enological practices on the wine sensitivity to oxidation
– Use of collected knowledge to produce a new product: sparkling wine, white or rosé from sangiovese grapes
– Determination of cellar good practices to obtain red wines with a long commercial life by using the sustainable low input strategies
